Sovereign Harbour Perfect Cooking Rice

Someone recently asked me in Watford... Do you eat rice?

Of course I said.

He added... how do you cook your rice?

This made me think...How people cook there rice!!

I usualy use Basmati Type of rice... Why?.. because I use the Long White Varieties.. I always did.

Here is how I cook my rice.

I take one cup of rice as a measurement.

Add two cups of water.

Place in a Microwave Container which I use only for cooking rice so it is not stained with other food.

My Microwave Power is over 800 Watts.

On the full power for 15 minutes, then take it out and rince.

Perfect rice every time as I have been doing it for years.

Next time, I share with you a secret of cooking my own version of Sovereign Harbour Indonesian Hot Rice Salad which I learnt from a visiting customer to my business in Watford.

Untill the next time... Enjoy Cooking.

Sovereign Harbour Quick Compote

Ok, It is easy to open a tin of this or a tin of that... even soaking few Dry Apricots and Prunes overnight with hot water.

Right, let me tell you what I did lately.

I had some Apples and Pears in the fridge.

When it come to eating them, I don't do that so often and many a time I had to put in the bin.

I had four apples and three pears.

I feeled them with a Potato Peeler, one of the best gadget in my kitchen.

I boiled some half a litre of water and added two table spoons of Cane Sugar and two Table spoons of fine sweetners.

I also added two table spoons of pure lemon juice.

Disolved the lot until the water is clear.

Cut each fruits into quatres and cut the pips off.

Place the lot into a glass bowl and place it into the Microwave for ten minutes.

I rested the bowl until cool and transfer the fruit into another container and place it in the fridge overnight.

What a delight and refreshing to have the next morning.

Enjoy.

Sovereign Harbour Potato Salad

I have been busy lately improvising recipes for my clients in Watford where I have a managed business called Mr. Spiceman of Watford.

I am realy honoured that some of Caterers Clients phone me for advise and ask me sometime to blend special recipes they picked on google.

This morning morning, I feel good, though a bit tired from having so many meetings.

I say, it is good to be busy.

I asked my wife Carol what shall be have tonight.

The usual answer... whatever you fency but do it yourself.

OK, my wife, blessed her, she is a good cook, that is why we enjoy our food.

Lets do tonight a basic potato Salad and a Beatroot Salad to go with my vegetarian paella.

I realy don't fency going out to buy the ready made Potato Salad and Beatroot Salad.

My daughter Sharon baught me a hand dicer on my 70th birthday.

She knows I love cooking and now I use it a lot.

I had some medium/large potatoes which I use for baking.

I peeled four medium potatoes and each I sliced lengthway into three.

I put each slice in the hand dicer and here I have plenty to cook in the Microwave.

I added some water and place it for 10 minutes to cook.

once cooked, I let them cool off a bit then I added Dry Parsley, Salt, Pepper, Mayonaise blended with Salad Cream to give the potato salad that tangy taste.

I put it in the fridge for tonight serving.

Then I have four cooked beetroots which I slice each one lengthwise into three and put them in the dicer.

I blended Powder Sweetner with Vinegar and a table spoon of cane sugar.

I placed the lot in a jar and shake it.

I placed the Jar in the fridge for tonight.

I cooked in the Microwave a cupfull of Paella Rice blended with Paella Seasoning which I sell both at Mr. Spiceman of Watford and for ten minutes it is ready.

Took the cooked Paella rice and blended with tin of cooked peas, sweetcorn and diced Bell Pepper pre-boiled.

I added salt and peper and scrambled egg.

Tonight, I am ready to have Vegetarian Paella with Beetroot and Potato Salad.

Cheers !!!

Sovereign Harbour Version of Baba-Ghanoush

Baba Ghanoush is a Middle East dish found around the shore of the Mediteranian and stretch further than that into Bulgaria, Romania and as far as India with many, many versions.

But the basic of Baba Ghanoush is the eggplant or better known here as Aubergine.

It is an ideal dish for Vegan/Vegetarian.

you can use the versions either with Olive Oil or Tahina, a paste made from Sesami Oil.

Baba Ghanoush often associated with Meze or appetizers - those little dishes they serve before meals.

In my opinion, by using your imagination, you can make a meal out of it... some contradict my view.

Lets start with the basic preparation.

The traditional way is to cut the aubergines in half, place them face up in oven dish, sprinkle with oilve oil, salt and pepper and roast for about 30 minutes on 200 degree.

Take up, scoop the pulps out and leave the skin to be used later for presentation.

so far so good??...

place the pulp into a blender, add 1 Tbs of ground cumin, 1 Tbs of ground Corriander, 1 Tbs of dry parsley, a pinch of hot chillies to your liking, 1 Tbs of ground garlic, 2 tbs of lemon juice.

Blend until smooth consistance.

Normaly, when you scoop the pulps, tradition say squeeze the excess water before mashing.

I say leave it because otherwise by squeezing the excess water, the eggplant become greedy and absorbe a lot of oil.

once you are satisfied in the consistancy you created in the blender...take it and place in a dish.

dice onion and tomato and mix with mayonaise.

add the Aubergine to oil ( you can use olive oil or Vegetable oil or the traditional Tahina.) with further lemon juice and salt to taste.

blend in the diced tomato, onion and the mayonaise and place in the fridge for an hour.

It is read to be served.

Tonight, I am having it with Grilled Dover Sole sprinkled with my Magic Fish Seasoning which I blend and sell at Watford  where I have an established business since 1977 called Mr. Spiceman of Watford.

Enjoy !!

Sovereign Harbour - what are you having tonight??

so far, it has been a long morning for me.

just been back from attending the 10am Social Club Coffee Morning at Simply Italian Restaurant at Sovereign Harbour Waterfront.

Last evening ( Tuesday), I attended my local Rotary Club in Sovereign Harbour at 7pm @ Simply Italian Restaurant Annex, Sovereign Harbour Waterfront.

The food was not so great!!... but I enjoyed my Cappuchino.

I have a lot of catching up to do with my business in Watford, Herts ( Mr. Spiceman of Watford Est. 1977) such as keep up the VAT up todate, see to the ordering for this weekend, read the many e-mails I receive...( thank you for keeping me busy with the many recipes you send - appreciated.  appologies if I don't reply ).

I told my wife... this evening should be simple, lets eat out.

She agreed... no cooking at home mean no washing up to do... great!!

I picked up a publication at my local Sainsbury called Everyday - Easy.

I like the easy part.

The cooking is left for another day...

Sovereign Harbour Cookery Club will stay online

Things are going slow in Sovereign Harbour.

One thing or another, I blame the weather of course !!

We had good weather and bad weather... my honest opinion, I needed more time to spread the news properly before launching this new iniative.

I am not a quiter and I don't beleive I have done the wrong thing in helping others.

The doors are still open for me to carry on contributing on this Blog for the benefit of all those who need orientation to enjoy cooking.

Sovereign Harbour Cookery Club will be kept alive with new recipes posted on this Blog.

I will try again in the future to form weekly groups to socialise and learn from each others.

In a away, I have over-stretched myself by taking on activities on Monday.

I have a successful and a very busy business, established  in Watford, Herts UK since 1977 which is managed by family and friends who have been with me for a long time.

Although I oversee  the management of my business, I am also active socialy which leave me little time to spend with my wife Carol to whom I married over 41 years ago.

I enjoy contributing to this Blog and hope by doing so, I will make friends with those who follow me on this Blog as well as on Facebook and Twitter.

Next week I will talk more about Hemp Seeds with its properties for health and Araminth Seeds which are indigenouse to Mayans in Central America.

Thank you for following me on this Blog.

Sovereign Harbour Tabboulet with Quinoa

What is QUINOA...

Let me explain....Quinoa is tiny seeds, hulled and white in colour.

They are high in protein and lower in carbohydrate than most known cereals.

Cooked quinoa has light, mild and fluffy texture with a hint of nutty taste.

Because QUINOA is Gluten Free, it can be used instead of Pasta, CousCous, Millets etc...

How I would cook QUINOA.... I cook it like cooking rice but instead of adding water, I use Vegetable Bouillon.

Sometime, I make Tabboulet ( Lebanese love there Tabboulet which you find on every home table),
by mixing QUINOA with hot Chicken Soup and leave to be soaked for couple of hours.

I chop 2 medium Tomatos and half a midum size cucumber into small diced cubes.

I also chop 2 spring onion.

I mix together together with some Dry Mint and Dry Parsley and three table spoon of Lemon Juice and three table spoons of Vegetable Oil ( some use Olive Oil ).

Add pinch of Salt & Pepper.

Mix everything with the soaked QUINOA which should be by now soft.

leave theTabboulet in the Fridge and serve when needed as salad.

Lebanese use Boulgar Cracked Wheat which is not Gluten Free.

Enjoy

Sovereign Harbour Quick Hummus Dip

I can hear so many shouting at me...We know how to make Hummus....

Yes my friends, try to make quick one !!....

Yes I hear... it is quick to make Hummus Dip.

Let me finish please....

For those not in the know.... let me give a space to tell them  how I make a quick Hummus.

Let start...

Open a can of cooked chickpeas/garbanzo and drain.

take 3 medium size cloves of garlic and chop into peices.

place chickpeas and garlic in a blender or liquidizer, add two table spoons of lemon juice, four table spoons of vegetable oil ( if you prefer olive oil... I prefer vegetable oil).. add a pinch of white pepper and a bit of salt.

Blend together until you see smooth consistent.

I cheat by adding ready made Hummus from the Supermarket... my idea is to use the Tahina Paste within the ready made Hummus instead of buying a jar of Tahina which take valuable space in my cupboard.

Hey presto... you have delicious Hummus Dip to be chilled in the fridge and ready to enjoy.

Sovereign Harbour Gluten Free Club

At this morning meeting of Sovereign Harbour Vegan/Vegetarian Society, I met a very nice lady who has been Celiac all her life.

What a breath of Fresh Air talking to her.... active, full of energy... simply a pleasure to have a conversation with.

She told me that since January this year, the Bakery Giant Warburton have launch a range of White and Brown Gluten Free/Wheat Free cut fresh bread.

Sovereign Harbour ASDA stock the White and Brown  Warburton cut 400g Gluten Free/Wheat Free Bread which is sold at about £1.99.

However Sovereign Harbour ASDA do not stock the 600g version nor they stock the Gluten Free/Wheat Free white and brown  Warburton rolls.

Morrison in the Old Town stock in addition, Barburton Gluten Free/Wheat Free Cumpets and Fruity Tea Cakes.

Tesco do not stock Worburton  Gluten Free/Wheat Free bakery range.

and, as I understand, Sainsbury only stock the White Warburton 400g GF/WF sliced bread.

My friends recommend the use of the Brown GF/WF sliced bread as she said... they are so nice and taste no different from ordinary brown bread.

Enjoy !!....

I am thinking of creating ..... Sovereign Harbour Vegan /Vegetarian Society.

More and more people are turning there back on eating meat and the like.

If you want to make friends and join in sharing evening out... Join me with the rest of the group every Monday at 10am at Seamoors Wine Bar, Sovereign Harbour Waterfront.

next time you eat Falafel... look at the inside of the balls.... sometime Green, sometime yellow, sometime different colours.

Why ??

it all depend on the beans used... not necessary, as told, you must use chickpeas or garbanzo.

Also sometime, bread is used to bind the falafel balls so be careful those with Food Intolerance !!

Sovereign Harbour & District Gluten Free Club - UPDATE

For those who couldn't make it today, here is what we talked about....

Pastry Making.... ORGRAN  UK have sent me stock of Gluten Free Pastry Making without adding Eggs.

I also had at hand ORGRAN Egg Replacement which proved popular.

We also talked about making bread at home and the use of various Gluten Free Flour including the best way of making cakes.

Next week I will be bringing various Gluten Free Flour for making bread and also Special Gluten Free Mix for making Cakes all under the brand ORGRAN.

Those who will regularly attend will be able to purchase ORGRAN products at cost + 10% which is the price the Retail Shops pay before adding there profit margin.

What matter here is that the idea to get those who suffer from food intolerence such as Celiac or Diebetes can come together in the form of Social Club with Special Interest.

Beeing Celiac is not a cheap option.... I am trying to help as much as I can to make the spending "LESS" especialy for those who are officialy diagnosed as Celiac to qualify for free certain brand of bread which are tastless.

The point is... Why suffer ???.... You have now the option to join our group for FREE and you do not have to be diagnosed as Celiac Sufferer.

Unfortunatly, Celiac UK did not have the courtesy  to answer my calls.... I know they are a Charity...But why can't they help those, such as myself,  who is extending the hands of friendship by  giving the time for free to help others ??... I don't understand !!!

It does not matter if Celiac UK give there blessing or not to this New Group in Sovereign Harbour... with the help of local GPs, the local Chemists, the various people who are willing to spread the news including the Editorial of Eastbourne Herald... I thank you.

I will keep this Gluten Free Group in Sovereign Harbour alive in order to make it one of those important Social Event in this area.

Come and Join us for FREE next Monday at 3pm Simply Italian Annex at Sovereign Harbour Annex.

Lets talk Gluten Free and Diabetic.

Sovereign Harbour AM Cookery Club - update

At this morning meeting for the 2nd time, I am sorry to report that the meeting was not well attended.

For this reason, I am now suspending the Monday AM Cookery Club but I will return to it at a later date.

Those who did not give there support to the FREE AM Cookery Club in Sovereign Harbour have there own reason to why.....

I still feel that Monday AM - FREE Cookery Club can be an additional social event in the  Harbour Calender.

Lets hope this event will be launched successfully in the future.

However... the PM Cookery Club is now changed to Sovereign Harbour & East Sussex Gluten Free Group.

This group will meet every Monday at 3pm at Simply Italian Annex, Sovereign Harbour Waterfront.

Sovereign Harbour PM Cookery Club - Celiac Group

Today the 12th of September 2011 at 3pm saw the launch of a Celiac Group in Eastbourne Sovereign Harbour.

The event took place at Simply Italian Restaurant Annex, Sovereign Harbour Waterfront.

Attended by Mr. David Allam, East Sussex Deputy Lieutenant and his wife who is Celiac sufferer herself.

I send my thanks for coming to this event.

Because of the bad weather, many who wrote to confirm there attendance did not show up on the day.

It was left for the few who turn up.

We had a good hour of discussion.

It concluded that those suffering from Celiac are not interested in how to cook.

The interest was that a weekly social meeting will benefit all those with Celiac Desease by learning from each others and make friends.

It was mentioned that some have difficulties in making Gluten Free Pastry at home.

One person have mentioned that she purchased from Seaford Morrison ready made frozen Gluten Free Pastry produced by DS Gluten Free.

I will try to contact the local ASDA if they can put it as a Stock item.

I have asked my friends at ORGRAN UK to send me there Gluten Free Pastry Kit which I will bring to next week meeting.

I have also been asked if I can obtain Free Samples from various suppliers of Gluten Free Products.

The meeting was concluded that I should ask CEOLIAC UK if we can make this group an official weekly meeting place for those suffering from Celiac in East Sussex.

I have today e-mail Ceoliac UK with a proposition to send a representative to next week meeting.

Thank you to Mr. David Allam and his wife for your visit and look forward to see you again in the future when this group will expend with more members.

I call on all those who suffer from Celiac to come and join us next wed. at 3pm at Simply Italian Restaurant, Sovereign Harbour Waterfront, Eastbourne, East Sussex.

Thank you for coming

Sovereign Harbour Monday AM Cookery Club - the LaunchToday

Today the 12th of September at 10am saw the launch of Sovereign Harbour Monday AM Cookery Club.

The Wind was hawling.... a blinding drizzel was blowing away....the tipical type of weather you don't want to venture out.

I don't blame you.

Few hardy turned out but that was not the fun planned for the morning.

Lets start.....

Take the humble egg and what you do with it...

Scramble, Omlette, fried, boil....

Who in your opinion make the best Omelette ??

and how many kind of Omlettes you can make ??

Lets say you never cooked in your life..... let alone make an Omlette.

Where do you start?.... the egg of course.

Lets do a simple Omlette for one.

you crack the egg ( I use 2 eggs ) but you can use one or more.

Beat the egg or eggs and add two table spoon of tap water per one egg because as you cook the egg, moisture evaporate and the water help retain the texture.

Some people use milk... you can if you want to.

The next thing is to heat a small frying pan with a little bit of oil so the Omellette do not stick to the pan.

Some add a bit of butter to the oil to give the Omlette a Nutty Taste.

Filling the egg is simple as one, two, three...

The choice is yours... Cheese, Mushrooms, different Vegetables, Tomato and anything you fency or left over.

The Humble Omlette is open to your wide imagination.

Next Monday, come along and tell us what kind of Omlette you have done and share with us an original dish, passed to you through the family.

see you next Monday at 10am at Seamoor Wine Bar, Sovereign Harbour Waterfront.

join our Social Group... Cooking at Home for Fun.... It is FREE

Next week we try, as a group, learn how to do a good curry dish at home for all the family to enjoy.

Have a good week and thank you for coming.

The Gluten Free Collective Buying Club - The Launch

On Monday the 12th of September, I will be launching The Gluten Free Collective Buying Club in order to negotiate discounts on behalf of the members of the Cookery Club of Sovereign Harbour.

The negotiation with suppliers will be conducted through The Gluten Free Discount Stores - UK who will manage the stock taking, purchases and supply to members.

The Gluten Free Discount Stores will be located in Watford, Herts. where I have already  my business Mr. Spiceman of Watford - the Spice Merchants.

Delivery Supply to members is currently looked at in order to reduce the cost.

In my opinion, Gluten Free Products should be affordable and shouldn't cost so much.

I will encourage members to bake there own bread and make there own cakes in order to share it with other members by taking turn.

Wedding Cakes, Birthday Cakes and other Celebration Cakes will be sourced through members involvement in providing the imput and make the club a one big family.

It is my believe that I can help this community in saving lot of money through establishing and implementing various ideas which we can all share together.

Please come along and be part of this Club..... It is FREE to join.

Welcome and see you on the 12th of September.

The Gluten Free Cookery Club of Sovereign Harbour - explained

What is Gluten you may ask... yes, we all heard of gluten free this, gluten free that but what is gluten?

Gluten is a type of protein commonly found in rye, wheat and barley.

it is also found on most types of cereals and all kind of bread on the supermarket shelves.

saying that, not all foods from grain contain gluten as for example those which do not contain gluten such as wild rice, corn, buckwheat ( not to be confused with wheat), millet, quinoa, oats, soyabeans and sunflower seeds.

the gluten is the elastic rubbery in grains which bind the dough in foods such as bread which contribute to its spongy consistency.

Do you know that half of the world population has the Celiac disease.

In such situation, the gluten in food stimulate the immune system to react with the bowel tissue causing its inflamation.

That leads to flattening of the small intestine lining which interfer with the absorption of nutrients to feed the body.

Celiac is a life style can only be treated through gluten free diet.

Other food intolerance are not the same as Celiac which are not related to the inflamation of the intestines however, food allergy should be treated with the same respect as it effect our daily life.

Come along to Sovereign Harbour Cookery Club and join one of the two groups in order to meet others in the same situation as you.

Eating the right food  can prove a god sent recipe for good health.

Sovereign Harbour Cookery Club - Diabetic Group

Time for me to start thinking of those who suffer from Diebetes like myself.

Diabetic Cooking include the listing and choosing the right food and may contribute in aiding those who want to loose weight.

Those who suffer from Diabetes either type one or two know full well how difficult to find the right food to enjoy life with those who are not diabetic.

Diabetic Food is a vast industry exploited by multi-national businesses where they set up there prices high which shouldn't be.

Diabetic and the food we share with non-diabetics is a close subject to the heart of many homes around the world.

You know sometimes you crave for something sweet, yet you can not indulge in having nice things to satisfy your crave.

Sovereign Harbour Cookery Club will explore this subject in depth by talking about it, sharing informations by sharing recipes and be part of an active Diabetic Community - you don't need to isolated !!

You will be no longer on your own and your partners will have no need to suffer with you but on the contrary, let them share with you delicious home made food where all of you will enjoy.

Cooking and eating the right food is part of life enjoyment.

Come down and make friends with others starting on Monday the 12th of September at 10am at Seamoor Wine Bar, Sovereign Harbour Waterfront, Eastbourne, East Sussex.

Enjoy Life - Eat the Right Food Sensibly !!!...

Sovereign Harbour Cookery Club - Food Intolerence

Do you or any of your family or friends suffer from Wheat Intolerance ??... you are not alone.

Food Intolerance will be a subject which will be dealt by a New Group to be formed within the Cookery Club which will be launched on the 12th September.

This Special Group will meet on separate time, in separate venue but will be kept within Sovereign Harbour.

I have obtained the permission fro Simply Italian Restaurant to use there Annex at the Waterfront every Monday at 3pm starting on September the 12th.

At this very moment and time, I have no idea what to call this group within the Cookery Club.

The New Cookery Club will have no facilities for testing for Food Intolerance and Food Deficiceny.

This should be dealt by professional specialising in Diagnostic Food Intolerance and the best advise is to use your GP who will be able to refer you to specialist unit within your hospital.

I have seen so many of my clients talking about visiting testing places set up within Healthfood Stores - In my opinion, you should avoid this as they can't give 100% accurate diagnosis but the decision is yours and not up to me to point fingers.

Also they charge lot of money when you can get accurate diagnosis for free from the Hospital.

What I am trying to establish by setting up Sovereign Harbour Cookery Club is first of all to enjoy people company as a Social Weekly Event.

Second, you will meet like minded people with similar problems to yours.

And thirdly, to enjoy cooking and eating the right food without breaking the bank.

I am sure this New Cookery Club will be an asset to this Community in Sovereign Harbour but also good neighbours with the rest of the Community surrounding this beautiful corner of England.

Join us on the 12th of September and explore together the Joy of Cooking at Home.

I have established Watford Wholefoods in Watford Indoor Market since 1977 which is now a managed business by my family.

I have made many friends over the years with people suffering from Celiac and in need of strict supply of special dietry foods.

I have been befriended with a local importer in London who is the main agent in the UK for an Australian Manufacturer called Orgran.

On the basis of Orgran wide range of products and various other Herbs and Spices, I am able to put together recipes suitable for special  group within Sovereign Harbour Cookery Club who would like to cook together and share in the experience.

In my opinion, Sovereign Harbour Cookery Club will offer an ideal platform to come and enjoy the company of others in similar situation.

I look forward to welcoming you at the launch on the 12th of September at Seamoor Wine Bar but please, register your interest by e-mailing me to

Also,  please, if you know of anyone in the area who suffer from Celiac, put them in touch.

Thank you

Sovereign Harbour Cookery Club - Diabetic Group

It is time for me to start thinking of setting up different groups to cater for all types of cooking.

Diabetic is top of the list followed by How to loose weight by cooking and eating sensible food.

Let me start with Diabetic.

Those who suffer from Diabetic either type one or two know full well how difficult to find the right food to taste good, to satisfy the palate and finaly not to be a burden and enjoy life in the company of those not Diabetic.

It is very hard !!... do you agree??

Vast Industry was built around Diabetic, the same apply to Celiac,

Multi-National businesses were set up charging High Prices, exploiting the myth that you must eat this or that.... This shouldn't be.

Diabetic and the food we share with non-Diabetic is a close subject to the heart of so many sufferers, there friends and families all around the world.

You crave for something sweet, yet you can not indulge in having nice things.

We are all careful with Salt because we are told, eating lot of Salt will increase the blood pressure which may result in heart problem.

Yet Salt is found in all ready meals even in drinks including the tap water found as natural mineral.

Sovereign Harbour Cookery Club will explore this issue and try to solve for members so they can enjoy the foods they eat by sharing recipes and be part of an active Diabetic Community.

You will be no longer on your own and your partners will have not to suffer by sharing with you delicious home made food where all of you will enjoy.

This is one of the reasons why you should join and your friends Sovereign Harbour Cookery Club.

You want to eat and loose weight - why not ??....

Cooking and eating the right food is part of life enjoyment.

Come down and make friends with others.

Join the New Club " Sovereign Harbour Cookery Club" starting Monday 12th of September at 10am, Seamoor Wine Bar, Sovereign Harbour Waterfront.

Enjoy Life .... Cook & Eat Sensibly.
